Considered a “superfood”, miso is a key ingredient in many Japanese dishes like ramen and soup. It is packed with vitamins, minerals and antioxidants that strengthens the immune system. There are hundreds of types of miso with varying textures, flavors, and color but basically it is composed of two main ingredients, soybean and a fermented mold called koji. Are you curious how this popular Japanese food is made?
Join us on 17 March and we will visit a Miso factory to learn about the process of miso making! The Rokko Miso Co. director, Hasegawa-san, will guide us inside the factory of this company that was founded in 1918. We will also see their warehouse in Ashiya (Hyogo Prefecture) and learn the elaborate process that still follows traditional preservation techniques.
